Zygosaccharomyces bailii is a yeast that causes cloudiness in bottled wine due to the formation of flocculants and granular deposits.  This results in acetic acid being produced and malic acid being metabolised which means that wine then starts to give ‘off’ odours as well as increasing its’ PH levels.

Because this yeast is difficult to control, regular testing using this rapid (and highly specific test) is a useful tool to understand what is occurring in wine before issues arise.

This test kit can also be used to detect Zygosaccharomyces bailii in juice and other food products.  It is an alternative to the discontinued PALL kit and is suitable for those that want to detect just one species.

Optimised to run on the Mic qPCR cycler but well suited to other qPCR instruments.
